Gyoza Tare or sauce for Japanese-Chinese potsticker While gyoza aren't really Japanese in origin they are very much a part of the standard Japanese diet. This is a typical flavored sauce that is used as a dip for the gyoza. It just uses Fujiko's soba-tare for a quick sauce. 1 part soba tare 2-3 parts rice vinegar finely grated ginger sesame oil Mix the soba tare with the vinegar. Usually about 2.5x as much vinegar, but less is fine if it's too tart for you. Use a microplane if you have one to grate some ginger. It's to taste, but usually more is good... Mix that up, then float a little sesame oil on top, give it a swirl and it's done.
