Green Salad with Tuna Just a simple, cheap, tasty salad. Could probably make the presentation better, but it works for us. Ingredients: 1/2 small red onion, finely minced 1 clove garlic, finely minced ? rice wine vinegar (citrus would be good here too) ? simple syrup 1/2 tsp. sea salt 3-4 Tbsp. mayonaise 1 can yellowfin tuna in oil 1/2 tsp. black/white pepper, fresh ground 1/4 cup shredded, aged cheese - Parmesan is good as are others 2 serv. baby green salad mix 1 small tomato Dressing: Finely mince the onion and garlic. Place in a small mixing bowl along with 2 parts rice wine vinegar, 1 part simple syrup and 1/2 tsp of sea salt. Mix and let sit at room temperature for at least 1/2 hour. After onion and garlic have pickled a little add the mayonaise, oil from the tuna, fresh ground pepper and shredded cheese. Mix well and adjust for taste. Should be tangy and sweet. If you have room for more salt flavor a mustard might be nice. Tossing: With about 1/4 of the dressing toss it in a large bowl with the salad greens to just start coating. Mix the rest of the dressing with the canned tuna and toss 1/2 of this into the salad. Serve up the salad. Top with the reserved, dressed tuna and a few tomato slices.
