Fish Steaks 101--
 To keep the avocado from discoloring, prepare this salsa just before you cook the main dish. This is an excellent salsa with tuna steaks.
Makes about 1 cup

large orange , cut into segments

| 1 |
ripe avocado , pitted, peeled, and diced medium
|
| 2 |
tablespoons minced red onion
|
| 2 |
tablespoons minced fresh cilantro
|
| 4 |
teaspoons lime juice , from 1 to 2 limes
|
| 1 |
small jalapeño chile , stemmed, seeded, and minced
|
|
Table salt
|
| |
Combine all of the ingredients, including salt to taste in a small nonreactive bowl.
