Banana Freeze 1/2 cup sugar 1/8 teaspoon salt 1 cup water 1 large ripe banana, mashed 1/2 cup orange juice 1/4 cup lemon juice 1/2 cup instant nonfat dry milk powder 1/3 cup water Cook sugar, salt, and 1 cup water together until sugar dissolves (4-5 minutes). Remove from heat. Cool to lukewarm. Add mashed banana, orange, and lemon juices. Pour into a 1-quart freezer pan and freeze to a mush - about 1 hour. Put instant nonfat dry milk powder and 1/3 cup water into mixing bowl. Beat at high until stiff. Fold thoroughly but gently into frozen fruit mixture. Return to pan; freeze until firm. Freeze any leftovers. Yield: 6-8 servings
