Orange Honey Butter This is a whipped butter that goes great on pancakes, toast or whatever. I like it without syrup on pancakes, although it is rich it's really good. These measurements are highly variable, so feel free to adjust as needed. 1 lb unsalted butter 1/2 cup honey 1 tsp vanilla extract 1/4 - 1/2 cup orange marmalade (I only had a little marmalade and added more orange flavor with 1 orange zested. All the juice into a small saucepot with the zest. Add 1/8 cup sugar, as needed. Cook down until it's a very thick syrup. This is really even better than marmalade I think.) Whip together all ingredients until light and fluffy. If it gets too warm then just pop it into the refrigerator for a little chill before whipping again. Take the resulting cream and put onto parchment paper, rolling into a tube and chilling for storage. You can also freeze it. Just serve with pancakes in place of syrup!
