Cod Salad I came across this almost by mistake. Had some grilled cod and balsamic salad dressing at the same meal and they mixed nicely. Requires: Rice, brown is best Cod, flaked Shallot-Balsamic Dressing (recipe below) Shichimi Soy Sauce Green Onion, sliced finely Salt Mix fresh cooked rice with Shallot-Balsamic Dressing to taste. Mixture should be slightly under flavored. Put flaked cod in bowl, season with shichimi and soy sauce to taste. Add some dressing to slightly over flavor the cod. Leave to marinate for 5+ minutes. Toss sliced green onions into rice mixture, then turn in the cod with marinade. Sprinkle with sea salt and toss lightly. Serve immediately. Good hot and even better cooled. ============================================= Shallot-Balsamic Salad Dressing Original recipe yield: 3 Cups INGREDIENTS * 2 shallots, halved lengthwise and peeled * 1/2 cup balsamic vinegar * 2 tablespoons brown sugar * 1 3/4 cups olive oil * salt to taste DIRECTIONS In a blender or food processor, finely chop the shallots. Add vinegar and brown sugar, and process until smooth. Slowly add 1 3/4 cups oil, processing frequently, so as to thicken the mixture.
