Tuna Oil Dressing (salad dressing) Okay, it's just quick and dirty. in a small mixing bowl: Oil from one can of tuna, in this case albacore in olive oil dash of fresh garlic, crushed or microplaned 1 tsp brown sugar mix together until sugar is mostly dissolved 1/2+ Tbsp dijon mustard, place to one side of the mixing bowl slowly combine oil mixture into the mustard, trying to keep things thick as we go 2-4 Tbsp american mayo (hellmans, best food), place to one side of the mixing bowl slowly combine oil mixture into the mayo, trying to keep things thick as we go 1-2 tsp capers 1-2 tsp simple syrup, or none at all season with salt to balance flavor with sweetness and add bite if you want it for a big salad OPTIONS: Instead of simple syrup at the end use citrus juice. Orange would be nice. Add mild vinegar at the end for more zing. You can also add zest for a nice flavor. SERVING SUGGESTIONS: Put that tuna on a plate, pour this dressing over, or around it, top with orange or other citrus zest. Serve with romaine lettuce spears to scoop and eat.
