Dan's Standard Steak grilling Okay, I just jotted this down for memory sake. No hard and fast rules here. First, get a decent steak. I prefer 1" thick slices. Blot it dry, trim if necessary. Sprinkle with garlic powder (fine powder doesn't burn, but fresh garlic does), sea salt and fresh ground pepper. Drizzle olive oil and then briefly rub all into the meat. Repeat on other side. Rest steak on counter until nearly room temperature. Preheat grill (I prefer charcoal, but only patient enough for gas). At 500-550F oil grill surface, then cook steak with grill cover closed for 3.5 min each side. Should turn out about medium rare.
