Lomo Saltado As a Peruvian chef, I would like to share one of the most popular plates from the Peruvian cuisine: Lomo Saltado. Ingredients: 1 lb. Tenderloin, sliced in strips. 2 medium red onions, sliced in strips 2 medium tomatoes, peeled and cut into large pieces 1 lb. French fries 1 Tbs. garlic paste 4 Tbs. vegetable oil 2 Tbs. chopped green onions 4 Tbs. red vinegar 2 Tbs. soy sauce Salt, pepper, dry parsley and cumin to taste Optional: 1 Tbs. Peruvian chili ( Aji verde) Marinated tenderloin with 1 tsp. of vinegar, salt, pepper, dry parsley, cumin and garlic for 4 hrs. Brown meat in 2 Tbs. of vegetable oil, high temperature, remove juice while browning, and keep juice for later. Remove meat from heat, and on the same pan, add 2 Tbs. of oil, brown onions. Add salt and pepper, red vinegar, soy sauce, and Peruvian chili. Once soft, add tomatoes, meat, juice, and French fries (cooked already). Remove from heat and sprinkle green onions on top. Serve with steam rice. Serve: 4 plates.
