Steamed Eggs These are better than hard boiled eggs I think. Eggs should be over 1 week old if you want easier to peel eggs. Some say over 2 weeks old is better. If you need centered yolks for deviled eggs put the carton on its side for 24 hours. That should help center them. Eggs should be at room temperature, so if straight from the refrigerator temper them in hot tap water for a couple of minutes while the water is starting to boil. Put about 1 inch of water in the bottom of a steamer pot. Bring to a boil. Place eggs in steamer basket in pot. Steam for 10 minutes over medium heat. Remove eggs to cold tap water, changing water as necessary to cool. Eggs will be a nice medium cooked yolk. Just a hint of dark color in the middle. Whites will be firm, but still tender.
