Albondigas 1 lb ground beef 1/2 onion, diced 1/2 tsp fresh mint 1 egg 3 Tbsp raw rice 1/4 tsp cumin 1/4 tsp pepper 1 pinch oregano 1/4 tsp granulated garlic 1 tsp salt Chop onions and mint. Mix all the ingredients together and make small meatballs. Set aside. 3 stalks celery with leaves 1 1/2 onion, chopped 2 carrots, sliced 1 small bell pepper, chopped 1/4 tsp pepper 1/4 tsp garlic 1 can chicken broth 1 8 oz can tomato sauce 2 bay leaves 1 Tbsp salt 1 Tbsp fresh cilantro 8 c water 1 medium zucchini, sliced 1/4 c rice, raw Combine all ingredients and bring to a boil. Add meatballs slowly. Simmer about 1/2 hour.
