Menudo (Beef Tripe Stew) 2 lbs beef tripe 2 qts water 3 cans hominy, drained 2 Tbs. chili powder Salt to taste 4 tsp. mixed spices (cuminos and peppercorns) 3 cloves garlic 2 Tbs oil Cube tripe, rinse, and cook in water until tender. DO NOT ADD SALT TO WATER, IT WILL TOUGHEN TRIPE Grind spices and garlic in mortar. Brown chili powder in oil, add ground spices. Add cooked tripe, hominy and enough water to cover. Now salt to taste. Simmer 30 min. Down here were I live this is served a lot during the holiday party season. A sure cure for the morning after too much partying. Sometimes call the "breakfast of champions". It may be seasoned at the table with lemon slices, oregano and chopped onions.
