Rice Soup 1 - 1/1/2 lbs. cube steak 2 boxes spanish rice 1 large can stewed, mexican stylke diced tomatoes Grated cheddar cheese 1 c. finely chopped onion 1/2 c. finely chopped green onion chopped cilantro Cut meat into 1 inch cubes and cook in skillet on medium heat just until outside is brown. Remove meat from skillet and put in bowl with any juices. Open one seasoning packet from rice and sprinkle meat with 1Tbls. of seasoning mix. Make rice according to package directions. When rice is 1/2 way through cooking add onion, meat, and tomatoes to pot. Continue cooking until rice is done and let sit with lid on for 5 minutes before serving.
