Zesty Meatball Soup Meatballs: 1 lb. ground beef 1 cup fresh bread crumbs 1 egg 1 Tablespoon Rosarita Mild Chunky Salsa 1/2 teaspoon each: ground cumin, garlic powder and salt In large bowl, mix all ingredients wel. Shape into 1/2 inch balls Soup: 2 Tablespoons wesson vegetable oil 3 small zucchini, cubed 1 cup chopped onion 1 (28oz.) can Hunt's whole Tomatoes, undrained and cut up 1 (15oz) can whole kernel corn, undrained 1 (14oz.) can beef broth 1/2 cup Rosarita Medium Chunky Salsa 1/2 teaspoon ground cumin 3 cups cooked rice In Dutch oven, brown meatballs in oil; remove. Reserving 1 Tablespoon drippings; saute zucchini and onion until vegetables begin to soften. Add meatballs, and next 5 ingredients. Simmer, uncovered, 30 minutes. Stir in cooked rice and heat through. Makes 12 cups soup.
