Chili Pasta Salad by Dan Metcalf This is a tasty, hearty pasta salad flavored with a chili powder sauce. Chili powder sauce: Ingredients: 3 Tbsp Olive Oil 1 Onion (large) minced fine 2 Garlic cloves minced fine 4-5 Tbsp Chili powder, homemade is best salt to taste (good chicken bullion cubes can be used) brown sugar to taste (2 tsp?) water as needed In a heated saucepot pour in oil. Add minced onion & garlic. Sweat onions until soft. Add chili powder, stirring to coat onions. Once coated, add about a cup of water and continue cooking over medium heat. Add water as necessary to keep from burning. After about 3-5 minutes of cooking add in brown sugar and salt to taste. I do prefer the bullion over just plain salt. Continue to cook and stir, preferably with a wire wisk, to make a thick sauce. Add water as necessary to keep the consistency close to catsup. This makes more than enough sauce for the pasta salad, but it also works good on omlettes or other egg dishes. Pasta Salad: Ingredients: 4 Eggs, hard boiled 1/2 lb. dry Pasta, bite sized Mayonnaise Chili powder sauce Prepare pasta per instructions. Eggs should be sliced or chopped. Combine mayo & chili powder sauce in 50/50 portions and combine with pasta & eggs as needed.
