Dan's Quick Pasta Sauce This is a marinara style pasta sauce that works great in a pinch. Flavors are very bright, so if you need a more earthy taste just simmer for an hour or so. 1 large onion, chopped to .5" squares 2-3 Tablespoon olive oil 1 teaspoon sea salt 1/2 teaspoon black pepper Place oil and salt into 2 qt sauce pot. Medium high heat. 1 teaspoon dry basil 1 teaspoon dry oregano 1 teaspoon dry thyme few shakes of chile flakes Add dry herbs to taste. Saute mixture until onions are translucent. 1/2-1 cup fresh basil, chopped (optional) 1 can whole roma tomatoes (28oz) 1 teaspoon sea salt Place tomatoes and juice in blender. Blend on lowest speed to break up. Goal is to not damage seeds as they will make the sauce bitter. Add tomatoes, basil and salt to the sauted onions. Bring to a boil and simmer for 20 minutes. Adjust for flavor with salt and maybe a bit of brown sugar if you like.
